We were lucky enough to get a sneak peek of Gringo's along with a personal tour from Darren Conway, one of four partners involved in this venture. Gringo's will serve "Mexican inspired American Tacos" along with an excellent selection of tequila, mezcal, and Mexican beers. The partners involved with Gringo's hail from the incredibly fun and exciting atmosphere of Pier 13 in Hoboken. They plan to bring the same social vibes to 12 Coles Street.
Gringo's is very excited to be a part of the community while still preserving the historical aspects of the building. All the wood from the roof has been saved and reused around the outdoor seating areas. This stand alone building is something special and unusual in Jersey City. There will be 50 seats inside including 18 at the bar and 50 seats outside. We can't wait for Gringo's to come alive the first week of July!
Below are 25 photos as we will take you on a photo tour of what is sure to be one hell of a great time for anybody who visits:
Construction is still being finalized including the front doors and the stained wooden picnic tables.
This is an original post from Grove St. from the 1950's. There will be a globe on top to act as signage.
The landscape as soon as you step into the front doors. Bar to the right, dining area on the left.
The view from the Piñata Room. I venture to guess this being one of the most popular aspects of Gringo's. With piñatas stuffed in the ceiling, this room will be reserved for birthdays and other fun events where the person celebrating will have the opportunity to hit a piñata filled with prizes that will drop from the roof. Sombreros will be donned and maracas will be shook by all.
We mustache you a question...Are you ready to have a blast at Gringo's?
Nothing like the bathroom doors being lined with portable bathroom doors.
Excellent artwork isn't just for the dining room. The female restroom has its own chili.
The mens restroom gets a sweet pineapple!
A little humor never hurt anyone.
Dining room artwork displaying the 90s hip-hop feel.
More artwork in the dining room where servers will use iPads to accommodate guests that much faster.
You get the vintage feel with these painted tiles that make up the bar.
These awesome, refurbished lockers will be product storage behind the bar.
12 taps will include 4 Mexican beers and get this...6 cocktails. 2 of the 6 cocktails on tap will be their red and white Nacho Mama sangria.
Wrapped around the bar is the work of Letters by Laura.
A cool touch using license plates from Mexico.
This ice cream & milk truck from the 1960's is your view into the kitchen.
A walk up window for all your late night taco needs until 3am on Friday and Saturday.
The sidewalk will host many outdoor seats in addition to the picnic tables out front!

To say we are excited for Gringo's to open is a massive understatement. Not just for the food, but for the amazing social atmosphere it will provide. Be prepared for their Mariachi Brunch coming in late August and Gangster's Paradise/Hip-Hop Taco Tuesday coming after Labor Day.
